Ingredients
  

  • 1 lb 450g ground chicken
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 1/2 cup water chestnuts diced
  • 1/2 cup carrots shredded
  • 1/4 cup green onions finely sliced
  • 1/4 cup soy sauce low-sodium recommended
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon Sriracha adjust to taste
  • 12 –16 large lettuce leaves such as butter lettuce or iceberg
  • 1 tablespoon roasted peanuts chopped (optional, for garnish)
  • Fresh cilantro leaves optional, for garnish

Instructions
 

  1. Heat sesame oil in a large skillet over medium heat. Add the ground chicken and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
  2. Stir in garlic and ginger, and cook for 1 minute until fragrant.
  3. Add water chestnuts, carrots, and green onions, stirring to combine.
  4. In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and Sriracha. Pour the sauce over the chicken mixture and stir well. Cook for another 2-3 minutes until the sauce is heated through and everything is evenly coated.
  5. Remove from heat and let the mixture cool slightly.
  6. Spoon the chicken mixture into the center of each lettuce leaf. Garnish with roasted peanuts and cilantro if desired.
  7. Serve immediately and enjoy!
