Description

This Fajita Chicken Casserole combines the best of Tex-Mex flavors in a creamy, cheesy, and utterly delicious dish. Tender chicken and vibrant bell peppers are smothered in a tangy cream cheese mixture, topped with golden cheddar, and baked to perfection.

Ingredients
  

  • 3 large chicken breasts cubed
  • 2 cups bell peppers sliced (mix of red, green, and yellow)
  • 1 large onion sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese softened
  • 1/2 cup sour cream
  • 1 14 oz can of diced tomatoes with green chilies, drained
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro chopped (for garnish)

Instructions
 

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add chicken cubes, season with fajita seasoning, smoked paprika, salt, and pepper. Cook until golden and fully cooked, about 8-10 minutes. Remove and set aside.
  3. In the same skillet, sauté the bell peppers and onion until slightly softened, about 5 minutes. Remove and set aside.
  4. In a mixing bowl, combine cream cheese, sour cream, and diced tomatoes. Stir until smooth.
  5. In a baking dish, layer cooked chicken, sautéed vegetables, and the cream cheese mixture. Top with shredded cheddar cheese.
  6. Bake for 20 minutes or until the cheese is bubbly and golden.
  7. Garnish with chopped fresh cilantro and serve hot.
