Description

Homemade mayonnaise is creamy, fresh, and quick to make. This versatile condiment is perfect for dips, dressings, and sandwiches.

Ingredients
  

  • 2 large egg yolks room temperature
  • 1 tsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 1 cup neutral oil e.g., vegetable or canola
  • ΒΌ tsp salt
  • Optional: pinch of sugar for a slightly sweeter mayo

Instructions
 

  1. In a medium bowl, whisk together egg yolks, Dijon mustard, and lemon juice until smooth.
  2. While whisking continuously, slowly drizzle in the oil, starting with just a few drops at a time. Once the mixture begins to thicken, you can add the oil in a steady stream.
  3. Continue whisking until all the oil is incorporated and the mayonnaise is thick and creamy.
  4. Season with salt and a pinch of sugar if desired. Adjust lemon juice or mustard to taste.
  5. Transfer the mayonnaise to an airtight container and refrigerate until ready to use.
