Ingredients
  

  • 1 pound ground beef 85% lean
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 1 small head of cabbage chopped (about 6 cups)
  • 1 can 14.5 oz diced tomatoes, drained
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Optional garnish: Fresh parsley or shredded cheese

Instructions
 

  1. Cook the Ground Beef: Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into crumbles as it cooks. Remove the beef from the skillet and set aside, draining any excess grease.
  2. Sauté the Vegetables: In the same skillet, heat the olive oil. Add the diced onion and garlic, cooking until fragrant and translucent, about 2-3 minutes.
  3. Cook the Cabbage: Add the chopped cabbage to the skillet. Cook, stirring occasionally, until the cabbage softens and begins to caramelize, about 6-8 minutes.
  4. Combine Ingredients: Return the cooked ground beef to the skillet. Stir in the drained diced tomatoes, smoked paprika, cumin, thyme, salt, and pepper. Cook for another 5-7 minutes, allowing the flavors to meld together.
  5. Serve: Garnish with fresh parsley or shredded cheese, if desired. Serve hot and enjoy!
